NEW HAVEN – Geronimo Tequila Bar and Southwest Grill will expand to Delray Beach, Florida, sometime this year, according to co-owners Robert Bolduc and Marc Knight.
The restaurant opened its flagship in New Haven in 2007 and opened a second restaurant in Fairfield in 2013. The new eatery will be located at 105 E. Atlantic Ave. in Delray Beach.
“We created the Geronimo brand out of a shared love for good food, delicious drinks, and the desire to create an experience for guests in a beautifully designed and authentic space,” said Bolduc. “The uniqueness of this cuisine – with Santa Fe-sourced red and green chilis serving as the root of all dishes – really is the first fusion cuisine in the United States, incorporating Native American, Spanish, Mexican and Moroccan ingredients, techniques and flavors.”
Knight and Bolduc developed their mutual admiration for the restaurant in the 1980s. And in the 1990s, they experienced Santa Fe, New Mexico, cuisine and fell in love.
“It was while I was on a cross-country trip during the 90s that I first visited Santa Fe, and while the plan was to only stay a night, I was so impacted by the food, people and architecture that I ended up staying a week,” Knight said. “The cuisine offers flavors, aromas and spices I had never seen anywhere before, and truly does not exist outside of this region of the United States.
The all-day food menu will stay true to Southwestern cuisine celebrating grains, root vegetables and ingredients sourced directly from local purveyors in New Mexico. The brand’s award-winning Hatch Green Chile Stew, Buffalo Steak Chile, Chiles Rellenos, Frito Pie, Yuca Fries and large selection of tacos, featuring fresh, housemade corn tortillas will be complemented by the largest selection of Tequila on the East Coast.
Designer Christian P. Arkay-Leliever is transforming the 5,000-square-foot space to welcome guests with a design aesthetic that features the colors, textures, architectural features and art of the region. The focal point of the indoor and outdoor space will be a large, shared bar that services guests dining indoors and out.
