Seeking to blend Caribbean and Mediterranean culinary traditions, Cotsa Vino, which recently opened in Norwalk a stone’s throw from the Stew Leonard’s on Westport Avenue.
The restaurant is a family affair owned by Andres Diaz and Sandro Toro. Chefs Vladimir Tolentino Collado and Miguel Castillo bring flavor from around the world to the bright dining room just off the Norwalk Green.
“We are thrilled to open our dream restaurant in the city of Norwalk,” said Andres, who gained experience from time at SoNo favorite Tablao Wine Bar and Nômade in Westport. “Sandro and I enjoyed our time at these local hot spots, but we always knew a place of our own was on the horizon.”
Collado and Castilo both hail from Puerto Rico and have developed a menu that alternately combines Italian and Greek ingredients with Caribbean sensibilities, or does the opposite.
