Just in time for the Fourth of July, chef Peter X. Kelly, who now helms Apropos at The Abbey Inn & Spa in Peekskill, has designed a new menu for the restaurant, featuring local ingredients that are prepared with European techniques and Asian embellishments. For a holiday toast, every guest will receive a complimentary glass of sparkling wine.
Peekskill’s free fireworks event is on July 4 from 7 p.m. to 9 p.m. at the Riverfront Green. The fireworks display will be easily visible from Apropos, which sits on a hill high above the Peekskill waterfront. The restaurant will serve dinner from 5 p.m. until 9 p.m.
Kelly, whose restaurants in the Hudson Valley include X2O Xaviars on the Hudson in Yonkers, is known for an interpretation of contemporary American cuisine that has earned accolades on national television and in the hospitality sector. He arrives at Apropos at a time when the dining room has been revitalized and the wine list expanded.
