Winter is a great time for a hardy pasta dish, and few are hardier than seafood fra diavolo, courtesy of Matt Alexander (executive chef, Grade Above prepared foods brand/Cingari Family ShopRite). Cingari ShopRite also sells it prepared in its 12 Fairfield County stores:
Cingari Family ShopRite’s Seafood Fra Diavolo
Ingredients:
- 2 28-ounce cans of plum tomatoes
- 10 scallops
- 12 shrimp
- 1 tablespoon extra-virgin olive oil
- 2 ounces diced onions or shallots
- 3 cloves minced garlic
- 1 teaspoon anchovy paste
- 1 tablespoon tomato paste
- 1 tablespoon kosher salt
- 6 basil leaves
- ½ bunch parsley chopped
- 2 pounds of desired pasta
Directions:
- Pour plum tomatoes into bowl. Crush them with hands gently.
- In a 3-to-4-quart saucepan, heat oil on medium heat and add onions.
- When onions are translucent, add minced garlic and anchovy paste. Cook for 2 minutes.
- Add tomato paste and cook 2 minutes.
- Add salt, plum tomatoes and shrimp. Simmer on low until shrimp are pink.
- Add scallops and cook for 3 minutes.
- Add basil and parsley. Serve with pasta and enjoy.
