What’s cooking this weekend? Cingari Family ShopRite’s seafood fra diavolo 

Winter is a great time for a hardy pasta dish, and few are hardier than seafood fra diavolo, courtesy of  Matt Alexander (executive chef, Grade Above prepared foods brand/Cingari Family ShopRite). Cingari ShopRite also sells it prepared in its 12 Fairfield County stores:  

Cingari Family ShopRite’s Seafood Fra Diavolo

Ingredients:

  • 2 28-ounce cans of plum tomatoes 
  • 10 scallops 
  • 12 shrimp 
  • 1 tablespoon extra-virgin olive oil 
  • 2 ounces diced onions or shallots 
  • 3 cloves minced garlic 
  • 1 teaspoon anchovy paste 
  • 1 tablespoon tomato paste 
  • 1 tablespoon kosher salt 
  • 6 basil leaves 
  • ½ bunch parsley chopped 
  • 2 pounds of desired pasta  

Directions: 

  1. Pour plum tomatoes into bowl. Crush them with hands gently. 
  1. In a 3-to-4-quart saucepan, heat oil on medium heat and add onions. 
  1. When onions are translucent, add minced garlic and anchovy paste. Cook for 2 minutes. 
  1. Add tomato paste and cook 2 minutes.  
  1. Add salt, plum tomatoes and shrimp. Simmer on low until shrimp are pink.  
  1. Add scallops and cook for 3 minutes.  
  1. Add basil and parsley. Serve with pasta and enjoy.
