
The Delamar Westport, the newest hotel in the Delamar Hotel Collection, now has a new restaurant.
GHG Restaurant Collection has announced the opening of Dandelion, led by corporate chef and partner Frederic Kieffer in collaboration with corporate director and partner Hicham Amaaou.
“Dandelion is a celebration of Mediterranean cuisine at its most alive and joyful,” Kieffer said in a statement. “We wanted to bring that sense of sun, sea and conviviality to Westport in a way that feels both contemporary and welcoming.”
The design of Dandelion, led by Amaaou, reflects the same spirit. Lush greenery, warm wood tones and sculptural details blend in an atmosphere where floor-to-ceiling windows flood the dining room with natural light, supplemented by pendant lighting. From intimate seating nooks to a vibrant bar and sunlit dining spaces, Dandelion offers a versatile setting for meals and other gatherings.
With decades of experience using fresh, seasonal cuisine, Kieffer has built a reputation for excellence at l’escale at the Delamar Greenwich Harbor, the Artisan Restaurants (Southport and West Hartford) and the La Plage Restaurants (Westport and Mystic).
