GREENWICH HOTEL WELCOMES EXECUTIVE CHEF AFTER $40 MILLION, MULTIPHASED RENOVATION

The newly renovated Hyatt Regency Greenwich, in partnership with Trinity Investments, have appointed Joe D’Agostino as executive chef, a French Culinary Institute alum with 15 years of industry experience. In this role, D’Agostino will oversee menu development, staff training and day-to-day food and beverage operations across the historic hotel’s impressive dining venues, as well as weddings and social events catering. 

  

On the heels of its recent $40 million renovation, Hyatt Regency Greenwich is set to revitalize the Greenwich dining scene with a portfolio of culinary experiences. Under D’Agostino’s supervision, the kitchens of Hyatt Regency Greenwich will strive for perfection with fresh and simple favorites for guests and locals alike, by incorporating local, sustainable ingredients and creating menus with a ‘farm-to-table’ mentality.

Born and raised in New York, D’Agostino has been working as a chef in the culinary arena for 15 years. Most recently, he served as executive chef for Market Hospitality Group in Danbury, Connecticut, running all day-to-day operations for corporate dining, breakfast and lunch, as well as the planning and execution of all weddings, social luncheons and dinners. Prior to that position, he was the executive sous chef de cuisine at HNA Palisades Premier Conference Center in Nyack, New York, and before that as executive sous chef at the acclaimed Tarrytown House Estate – Cellar 49. He also served various culinary roles at Hampshire Country Club in Mamaroneck, The Keenan House in Ossining and Pound Ridge Golf Club in Pound Ridge, New York. His many years of working in the great New York area earned him a solid reputation for forward-thinking farm- fresh sensibilities displayed in his work at several restaurants. D’Agostino earned his classic culinary arts degree from the International Culinary Center/French Culinary Institute in New York.  

  

Once home to Condé Nast’s printing operation, located in the heart of Old Greenwich, the 374-room property invites guests and community members alike to enjoy the modern yet charming guest rooms along with various common spaces and memorable dining options, including Townsend Bar and Glenna’s Cafe & Market. 

    

Hyatt Regency Greenwich’s beloved Sunday Brunch service recently returned to Townsend with an all-new menu celebrating New England culinary tradition, freshly made by the hotel’s talented chefs and complemented by bottomless Mimosas and Bloody Marys. Held on the second Sunday of each month, the impressive feast includes brunch favorites such as omelets made to order, French Toast and Belgian style waffles, smoked bacon and sausage, creamy Tuscan ravioli, wild mushroom risotto, slow roasted prime rib and herb brined turkey breast carved to order, and a signature Seafood Tower featuring chilled lobster, shrimp, east coast oysters and littleneck clams. The cherished tradition also includes special holiday brunches for Mother’s Day, Easter, Thanksgiving and end-of-year celebrations. Reservations are encouraged and available for advance booking on Tock.

Named for the Connecticut-born World Golf Hall of Famer Glenna Collett Vare, the hotel’s in-house café and marketplace offers a wide selection of freshly prepared foods, hot and cold beverages and regional snacks that help the Greenwich community wake up and refuel to do great things, day and night. Menu highlights include fresh bagels, egg and cheese sandwiches and steel cut oats for breakfast, and assorted soups, salads, sandwiches and flatbreads for lunch and dinner, as well as cappuccinos, lattes, iced and hot coffees, nitro cold brew, hot tea and kombucha made to order all day. breakfast, lunch, and an assortment of grab-and-go options.
