In view of the skyrocketing cost of eggs, a lower-cost alternative is being promoted in lieu of decorating Easter eggs: Easter Potatoes.
The Denver-based agricultural cooperative Potatoes USA is pushing the concept of Easter potatoes, noting that the beloved spud is more affordable, requires less prep work for decorating eggs, and are tough against drops and falls by messy young artists.
“I”™m thrilled to see so many families hopping aboard this new trend,” said Bonnie Johnson, director of nutrition and industry relations at Potatoes USA. “As a dietitian, I love seeing families embrace vegetables in creative ways. Making potatoes a fun part of your holiday will help children learn to love the spud ”“ and all its incredible nutritional benefits.”
Potatoes USA is encouraging a social media campaign for this concept via #easterpotatoes and the tagging of Facebook and Instagram photos with @PotatoGoodness. But if the idea of painting potatoes doesn”™t sit right, Potatoes USA is also calling attention to the PotatoGoodness.com website for spring recipes.
