Macaroni salad is a favorite on Fourth of July. This year, chef Dave Cingari of the 12 Cingari Family ShopRites in Fairfield County has come up with an Asian twist sure to provide partygoers with a savory side dish. Or you can save yourself the trouble and purchase it at one of the Cingari locations:
Sesame Garlic Noodle Salad
Ingredients:
- 2 pounds lo mein noodles, cooked and chilled”¯
- ¼ pound mushrooms blanched and chilled (any mushroom will do)
- ½ pound Napa cabbage
- ½ pound red cabbage
- ½ pound carrots
- ½ pound snow peas or snap peas, blanched and cut into 3 pieces
- 1 tablespoon sesame seeds
- 3 scallions, chopped
Dressing:
- ½ cup soy sauce
- ¼ cup water
- ¼ cup distilled white vinegar
- 1 tablespoon sugar
- 3 tablespoons sesame oil
- 1 teaspoon chopped garlic
- 3 scallions, chopped
”¯ Directions:
- Cook lo mein and chill.”¯”¯
- Thinly slice mushrooms, Napa cabbage, red cabbage and carrots.
- Whisk together all dressing ingredients until sugar dissolves.
- Combine all dry ingredients in a bowl and toss with dressing.”¯”¯
- Let mixture sit for at least one hour, toss again and serve. (Can be refrigerated for up to 2 days.)”¯”¯
