New chefs in Westchester

Two centers of hospitality in Westchester County recently added new chefs to their farm-to-table culinary operations.

Ryan Sachs has joined Tarrytown House Estate & Conference Center as chef de cuisine at Cellar 49 restaurant in the historic Biddle Mansion on the grounds of the hotel and meeting complex at 49 E. Sunnyside Lane.

A New Mexico native and former Arizona resident, Sachs previously was lead line cook at Six Peaks Grille in the Resort at Squaw Creek in Lake Tahoe, Nev. Both Tarrytown House and the Lake Tahoe restaurant are owned by Destination Hotels & Resorts Inc. in Englewood, Colo.

The menu at Cellar 49 offers a modern twist on classic tavern fare, according to Tarrytown House”™s management. Sachs in a press release said the restaurant “has an interesting appeal that is very unique to Westchester County and the tristate region. I”™m excited to be here and look forward to leading the team in pushing the culinary envelope for our guests.”

Outside Armonk, Brynwood Golf & Country Club has hired Cesar Guaraca as executive chef, tapping into kitchen talent at the Cipriani Group of international restaurants. Marco Arconte, Brynwood”™s new food and beverage director, also joins the country club at 568 Bedford Road from the Cipriani company.

Guaraca spent most of his 16-year career creating menus for many of the Cipriani restaurants as well as for exclusive catering events as executive chef of the Cipriani Group. Arconte most recently directed food and beverage operations at the Cipriani Restaurant in Manhattan.

“Our success is defined by our ability to bring the best qualified talent to Brynwood, and we”™re fortunate to have attracted these men to the club,” Brynwood co-owner Jeffrey Mendell said in a press release.

Brynwood”™s new executive chef in the announcement described himself as “absolutely the definition of a foodie”™” who enjoys working with all styles of food, from Asian to Italian and Mediterranean.
