Room at this inn for Christmas 

Apropros’ three-course, prix-fixe meal for Christmas Eve and Day reflects its Hudson Valley locale – at The Abbey Inn & Spa in the former St. Mary’s Convent at a Revolutionary War site in Peekskill. Entrées include beef Wellington with foie gras, duxelles (a mushroom preparation), puff pastry and haricots verts (French green beans).

Apropos – the restaurant at The Abbey Inn & Spa, a boutique hotel in the converted St. Mary’s Convent at a Revolutionary War site in Peekskill – is offering a Christmas Eve and Day dinner sourced – “apropos” of its locale – from Hudson Valley farms. 

Executive chef Danielle Ceruzzi’s three-course, prix-fixe menu begins with these appetizer choices – jumbo Barnegat light scallop cauliflower purée with raisin and caper emulsion; warm shrimp salad with avocado, Champagne and truffles; and toasted squash risotto with Pecorino, crispy prosciutto and sage. 

Entrées include Hudson Valley duckling with green peppercorns, hakurei turnips and sweet potato mousseline; Faroe Island salmon à la plancha with wild watercress, marble potatoes and pencil asparagus; and beef Wellington with foie gras, duxelles (a mushroom preparation), puff pastry and haricots verts (French green beans). 

The holiday meal concludes with bûche de Noël, mascarpone cream, shaved chocolate and dulce de leche; eggnog crème brûlée; or lemon sabayon (a kind of light custard) tart with shortbread crust and fresh raspberries. 

The Christmas menu is priced at $129 per person and is available Sunday and Monday, Dec. 24 and 25, from 1 to 6 p.m.
